Vegan Mushroom Spinach Fettuccini
- 6-8 Sliced Button Mushrooms
- 1 Clove of Garlic
- 1/2 a small Onion
- 1 Cup Vegetable Stock
- 1/2 Tbsp Olive Oil
- 3 oz. Fettuccini Or Rice Noodles
- 1/2 tsp Oregano
- 1/2 tsp Thyme
- Salt and Pepper
- about a cup but Spinach cut into ribbons
Through everything except the spinach into a pot, bring it to a boil than reduce to simmer for about 10 minutes or until the stocks almost gone, add the spinach, cook until wilted. Serve!
